Cooking Instructions

Cut all vegetables into strips or medium pieces. Blanch carrots, beans, and cauliflower for 2-3 minutes. Drain and set aside.
Heat oil in a wok or kadai. Add cumin seeds and let them splutter. Add sliced onions and sauté until translucent.
Add ginger-garlic paste and green chilies. Sauté for a minute. Add chopped tomatoes and cook until soft.
Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes.
Add bell peppers and blanched vegetables. Stir-fry on high heat for 3-4 minutes.
Add tomato ketchup and soy sauce. Mix well and cook for 2-3 minutes.
Add garam masala and mix well. Garnish with fresh cilantro. Serve hot with roti, naan, or fried rice.
