Cooking Instructions

Peel bottle gourd and cut into medium cubes. Wash and drain well.
Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden.
Add ginger-garlic paste and green chilies. Sauté for a minute. Add chopped tomatoes and cook until soft.
Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
Add bottle gourd cubes and mix well. Add 1/2 cup water, cover and cook for 15-20 minutes until lauki is tender.
Mash a few pieces of lauki with the back of a spoon to thicken the gravy. Add garam masala and mix well.
Garnish with fresh cilantro. Serve hot with roti or rice.
