Cooking Instructions
7 steps
Wash eggplants and apply oil all over. Roast them directly on gas flame or in oven at 200°C, turning occasionally until skin is charred and eggplant is soft (15-20 minutes).
Let the roasted eggplants cool. Peel off the charred skin and mash the pulp roughly. Set aside.
Heat mustard oil in a pan until smoking. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until golden brown. Add ginger-garlic paste and green chilies. Sauté for 2 minutes.
Add chopped tomatoes and cook until they become soft and oil separates. Add turmeric, red chili powder, and coriander powder.
Add the mashed eggplant and salt. Mix well and cook for 8-10 minutes on medium heat, stirring occasionally.
Add garam masala and mix well. Garnish with fresh cilantro. Serve hot with roti or paratha.
